Meet our mushrooms

Here are the mushrooms we grow on our farm from spore to fruit. We also like to experiment with a few new culinary & wellness mushrooms and may introduce others in the future. Mushrooms are enjoyed cooked or dehydrated and are perishable so refrigerate before any use. Mushrooms are best when used immediately after harvest but are generally good for a few days in the refrigerator.

Oyster Varieties

Oysters are great culinary mushrooms and a favorite for many. They also provide numerous health benefits, are rich in antioxidant and nutrients, have anti-inflammatory qualities, and may promote heart health, blood sugar regulation, gut health, and overall immune support. 

Pink

Pink oysters are delicate yet delicious. Some think they taste like bacon or ham and their flavor comes out even more when cooked. They are beautiful pink mushrooms and make a great meat substitute in many dishes. We like to saute them with potatoes, top on burgers and add to so many dishes. It’s also Keri’s favorite mushroom.

Blue

Blue oysters are a versatile mushroom and can be used in many dishes. Blue Oysters have a beautiful bluish-gray color, a meaty texture with rich flavor. Our favorite dish is Tortellini Alfredo with blue oysters because of their mild yet savory taste.  And they are always a big part of our vegetable egg scrambles in the morning!

Golden

Golden oysters are gorgeous and some believe the most delicious tasting oyster. A vibrant yellow mushroom, people are attracted to their beauty. These oysters are fragile and delicate. They are more tender than pink and blue oysters and also make a great meat substitute. Similar to Blue and Pink Oysters, we use golden oysters in a lot of our dishes to enhance the culinary flavor.

Italian

Italian oysters are one of the most delicate of the Oyster family. They have a very mild flavor and are one of the most versatile mushrooms for any culinary dish. They have a brown colored cap with white stems. These mushrooms work well as a stand-alone dish or in pasta, stir fry, on flatbreads and pizza, or really in any dish.

Snow Oysters

Another new oyster mushroom on the farm and boy are they beautiful. They are known as the “winter oyster”, with their bright bold white caps. Snow oysters are firm and keep their shape and texture when cooked. They tend to be sweeter in flavor than other oysters, yet mild and earthy. They are fantastic sautéed and make a wonderful enhancement to any dish. From a health benefit standpoint, researchers note that they may promote heart health, boost the immune system, and may contain antioxidant and anti-inflammatory attributes.

King Trumpet

The King Trumpet is part of the Oyster family and has golden caps and thick white stems. They have a savory nutty flavor with a firm, yet meaty texture. They are also denser than other mushrooms with a texture like scallops and some believe King Trumpets mimic that of seafood when cooked in butter and wine. King Trumpet mushrooms are also great meat replacers in dishes and the entire mushroom is edible.

Lion’s Mane

Lion’s Mane is a very popular mushroom with its unique characteristics. It’s also known as the hedgehog mushroom.  A wonderful culinary mushroom that many think tastes like crab or lobster. We love making "meatless" crab cakes with Lion’s Mane, throw them in many dishes and are awesome as fries or a sautéed side dish.  Some also like making Lion’s Mane steaks. Lion's Mane has health benefits too and research suggests improved cognitive health and performance along with reduced brain fog. 

Black King Pearl

The Black King Pearl (aka BKPO) mushroom is desired by many. Research indicates the health benefits of BKPOs include anti-inflammatory and anti-tumor properties and are full of antioxidants. They have a delicate, nutty flavor (though some think they taste like chicken) yet a firm, meaty texture. BKPOs have large, firm stems and we enjoy making vegan “scallops” with them and BBQ pulled mushroom sandwiches. They are also amazing sautéed!

Chestnuts

Chestnuts are delicious! They have a mild, nutty, sweet profile with a peppery finish. Their stems resemble asparagus after cooking with having a crisp, crunchy texture. Many compare their flavor and profile to that of shiitake mushrooms. We enjoy them sauteed in stir fry, fried rice, and as a stand-alone side dish. Chestnuts are known to relieve digestive issues, immune system booster, and research indicates a positive impact on heart health, blood pressure and blood sugar levels.

Piopinno

Our newest mushrooms at Millbrook Mushrooms! Pioppino mushrooms are popular in Europe and Asia as they go well in risottos, soups, stir-fries, sauces, and pasta dishes. They have chestnut brown colored caps and lighter colored stems. They are earthy, yet nutty in flavor and generally keep their shape when cooking. Studies have shown that piopinnos are rich in nutrients, and contain compounds that offer antioxidant, anti-aging, anti-inflammatory and anti-tumor attributes. Research also indicates that these mushrooms contain selenium and potassium along with other nutrients.
